
Blanched Asparagus with Orange-Ginger Mayonnaise Dip (for Diabetics)

Serves 4
Ingredients
- 1 lb (450 g) asparagus spears (blanched & chilled)
For dip
- 6 tbsps light mayonnaise
- 6 tbsps low-fat sour cream
- 1/2 tbsp vinegar
- 1/2 tbsp orange juice
- 1/2 tsp grated orange zest
- 1 garlic clove, crushed
- 1/2 tbsp Dijon mustard
- 3/4 tbsps grated ginger
- 1/2 tsp soy sauce
- 1/4 tsp sugar
- salt & pepper (to taste)
Instructions
- Combine all ingredients for dip in a bowl and mix well. Chill for 1 hour.
- Serve with the chilled asparagus spears.
