Blanched Asparagus with Orange-Ginger Mayonnaise Dip (for Diabetics)

Ingredients
  1. 1 lb (450 g) asparagus spears (blanched & chilled)
For dip
  1. 6 tbsps light mayonnaise
  2. 6 tbsps low-fat sour cream
  3. 1/2 tbsp vinegar
  4. 1/2 tbsp orange juice
  5. 1/2 tsp grated orange zest
  6. 1 garlic clove, crushed
  7. 1/2 tbsp Dijon mustard
  8. 3/4 tbsps grated ginger
  9. 1/2 tsp soy sauce
  10. 1/4 tsp sugar
  11. salt & pepper (to taste)
Instructions
  1. Combine all ingredients for dip in a bowl and mix well. Chill for 1 hour.
  2. Serve with the chilled asparagus spears.
