Chilled Cucumber Honeydew Yogurt Soup with Mint (for South Beach Phase 2)

  1. 1 English cucumber (diced)
  2. 2 cups (340 g) diced honeydew
  3. 8 oz (226 g) plain fat-free yogurt
  4. 1/4 cup mint leaves
  5. 2 tbsps fresh lime juice
  6. salt & pepper (to taste)
  7. mint leaves (for garnishing)
  1. Combine all ingredients together, then puree until smooth in batches.
  2. Transfer the pureed mixture to a large bowl and mix well. Season to taste with salt and pepper.
  3. Cover and keep refrigerated for 2 hours before serving.
  4. Serve the chilled soup in a bowl and garnish with fresh mint leaves.
