These gluten-free sorghum crepes are a great alternative to wheat flour pancakes, with the same flaky texture and subtle sweetness. They’re made with just a few ingredients such as whole grain sorghum flour, water, eggs, and salt.

Ingredients:

  • 2 large eggs
  • 1 tbsp oil
  • 2/3 cup (158 ml) milk
  • 1/2 cup sorghum flour
  • 1/8 tsp salt
  • 1 tbsp sugar

Instructions:

  1. Beat eggs until frothy, whisk in oil and milk until blended.
  2. Add in dry ingredients and mix until the batter is smooth.
  3. Heat a non-stick pan over medium heat and lightly coat with oil.
  4. Pour a small amount of batter to cover the pan thinly.
  5. Cook until lightly brown, then turn over.
  6. When both sides are golden brown, transfer to a plate. Repeat the same for the remaining batter.
  7. Serve hot.
