Gluten-Free Chilled Watermelon Mint Soup

- 1 1/2 lbs (680 g) watermelon flesh (cut into chunks)
- 2 tbsps lemon juice
- 2 tbsps chopped mint
- 1 tbsp fine sugar
- 6 tbsps white wine
- 1" root ginger (sliced)
- Blend all ingredients (EXCEPT ginger) in a blender until smooth.
- Pour into a large bowl with the ginger slices, cover and chill for 1-2 hours.
- Discard the ginger and garnish with mint sprigs (optional).
- Serve chilled.
