Gluten-Free Chilled Watermelon Mint Soup

Ingredients
  1. 1 1/2 lbs (680 g) watermelon flesh (cut into chunks)
  2. 2 tbsps lemon juice
  3. 2 tbsps chopped mint
  4. 1 tbsp fine sugar
  5. 6 tbsps white wine
  6. 1" root ginger (sliced)
Instructions
  1. Blend all ingredients (EXCEPT ginger) in a blender until smooth.
  2. Pour into a large bowl with the ginger slices, cover and chill for 1-2 hours.
  3. Discard the ginger and garnish with mint sprigs (optional).
  4. Serve chilled.
