Gluten-Free Peach Brandy Walnut Topping

Ingredients
  1. 2 fresh peaches (pitted & diced)
  2. 1/2 cup chopped walnut
  3. 2 tbsps butter
  4. 2 tbsps honey
  5. 2 tbsps apple juice
  6. 2 tbsps brandy
  7. dairy-free vanilla ice-cream (for serving)
Instructions
  1. Combine peaches, walnut, butter, honey and apple juice in a saucepan.
  2. Stir constantly over low heat (don't boil) until all ingredients are heated through.
  3. Off the heat and stir in brandy.
  4. Pour the topping over vanilla ice cream and serve.
