Grilled Snapper Fillet with Grapefruit Mojo Sauce

Ingredients
  1. 4 (8-oz each) skinless red snapper fillets
  2. 2 tbsps canola oil
  3. salt & ground black pepper (to taste)
  4. sliced grapefruit (for garnishing)
For grapefruit mojo sauce
  1. 4 tbsps olive oil
  2. 8 cloves roasted garlic
  3. grapefruit juice (of 1 grapefruit)
  4. 4 tbsps orange juice
  5. 2 tsps grated grapefruit zest
  6. 1 tsp honey
  7. 2 Serrano peppers (chopped)
  8. 1 tbsp chopped thyme
  9. 1/4 tsp salt
Instructions
  1. Combine all ingredients for mojo sauce in a blender and process until you have a smooth sauce. Set aside.
  2. Preheat grill to high.
  3. Coat fillets with oil and season to taste with salt and black pepper.
  4. Grill for a few minutes for each side, until golden brown and slightly charred.
  5. Transfer the grilled fish to serving platters and rest for a few minutes.
  6. Pour mojo sauce over the fish and garnish with grapefruit slices.
  7. Serve hot.
