Mock Hollandaise Sauce (for South Beach Phase 1)

  1. 4 tbsps liquid egg substitute
  2. 1 tbsp Smart Balance buttery spread
  3. 1 tsp lemon juice
  4. 1/2 tsp Dijon mustard
  5. dash of ground red pepper
  1. Whisk egg substitute and buttery spread over low heat until spread is softened.
  2. Add in lemon juice and mustard and continue cooking at low heat until thickened.
  3. Remove from heat and mix in the red pepper.
  4. If the mixture curdles, blend on low speed until smooth.
