Pepperoni Mushroom Pizza Soup (for South Beach Phase 2)

  1. 1 can (24-oz/680-g) no added sugar pasta sauce
  2. 8 oz (236 ml) low-fat milk
  3. 4 oz (113 g) low-fat cream cheese (softened)
  4. 3 oz (85 g) sliced low-fat pepperoni (or Canadian bacon)
  5. 1 cup sliced mushrooms
  6. salt & pepper (to taste)
  7. shredded reduced fat mozzarella (for garnishing)
  1. Heat all ingredients in a large saucepan, let it simmers until the cheese has melted.
  2. Remove from heat and stir to mix well.
  3. Serve in bowls as main meal, top with some shredded cheese.
