Savory Cauliflower Green Pea Pancakes (for Atkins Diet Phase 3)

  1. 1 lb (453 g) cauliflower (roughly chopped)
  2. 1/2 cup green peas
  3. 4 tbsps chopped onion
  4. 3 eggs (lightly beaten)
  5. 4 tbsps matzo meal*
  6. salt & pepper (to taste)
  1. Process cauliflower, green peas and onion in a food processor.
  2. Add in beaten eggs and matzo meal and pulse to mix well.
  3. Transfer the batter to a bowl and season to taste with salt and pepper.
  4. Preheat a non-stick pan over medium high heat.
  5. Pour about 1/4 cup of batter in the pan and spread out.
  6. Reduce heat, cook until golden brown, then turn over and cook for another minute.
  7. Repeat the same for the remaining pancake batter.
  8. Serve.
