Shrimp Onion Pepper Omelet (for Dukan Diet PV Consolidation/Cruise)

  1. 8 oz (225 g) large shrimps (peeled & roughly chopped)
  2. 1/3 green bell pepper (chopped)
  3. 1 medium onion (chopped)
  4. 1 tsp olive oil
  5. 2 tbsps dry white wine (tolerated) (omit this for PV Cruise)
  6. sea salt & black pepper (to taste)
  7. pinch of cayenne pepper (optional)
  8. 4 medium eggs
  9. salt & pepper (to taste)
  1. Put shrimps, chopped bell pepper and onion in a bowl.
  2. Add olive oil and wine, and season to taste with salt, black pepper and cayenne pepper.
  3. Toss well and refrigerate for 1 hour before cooking.
  4. Add salt and pepper to the eggs and beat together.
  5. Preheat a non-stick frying pan over medium heat.
  6. Add in the marinated ingredients and cook until the shrimps are just cooked.
  7. Pour the beaten eggs over the shrimps and stir lightly until the eggs are cooked. Fold into half
  8. Garnish with some spring onion (optional) and serve.
