Spicy Grapefruit Salsa

  1. 1 red grapefruit (peeled, sectioned & juice collected)
  2. 3 green onions (thinly sliced)
  3. 2 tbsps mint
  4. 1 small jalapeno pepper (minced)
  5. 1 tbsp red wine vinegar
  6. 2 tsps honey
  7. 1 tbsp extra virgin olive oil
  8. ground black pepper (to taste)
  1. Peel and section the grapefruit, collect dripping juice in a bowl. Squeeze any juice from the grapefruit membrane too.
  2. Add all the remaining ingredients to the grapefruit juice and mix well.
  3. Halve the grapefruit sections and add to the mixture. Mix well.
  4. Serve or keep refrigerated for later use.
  1. Can be served with grilled fish, grilled meat, or as dipping for spicy crackers.
